滸苔小知識

滸苔在日本稱為「青海苔」，與石蓴同屬石蓴科，是珍貴的食用藻類。滸苔含有膳食纖維、藻多醣、蛋白質、氨基酸及礦物質，脂肪含量低，並帶有獨特的海藻香氣與鮮味。常用於壽司、湯品、佃煮、天婦羅、大阪燒及燒烤料理，也常作為料理提味使用。
